Step 1 - Prepare the Marinade: In a large bowl, combine fresh lime juice, olive oil, minced garlic, chopped cilantro, cumin, chilli powder, salt, pepper, and optional jalapeño. Whisk together until well combined. Reserve ¼ cup of the marinade in a separate container to use as a finishing sauce. Do not mix this with raw chicken.
Step 2 - Prepare the Chicken:Pat the chicken breasts dry with paper towels. Place them on a cutting board and pound to an even thickness of about ¾-inch using a meat mallet. This ensures even cooking and better marinade absorption.
Step 3 - Marinate: Place the pounded chicken breasts in a large zip-lock bag or shallow dish. Pour the marinade (not the reserved portion) over the chicken, ensuring all pieces are well coated. Refrigerate for at least 4 hours, though overnight (12-24 hours) is ideal for maximum flavor development.
Step 4 - Prepare for Cooking: Remove the cilantro lime chicken from the refrigerator 15-20 minutes before cooking to bring it closer to room temperature. This promotes even cooking. Pat dry with paper towels to encourage better browning.
Step 5 - Grill Method (Recommended): Preheat your grill to medium-high heat (approximately 400°F). Oil the grates well to prevent sticking. Place cilantro lime chicken on the grill and cook for 6-7 minutes without moving it. This creates a beautiful character. Flip and cook the other side for another 6-7 minutes until the internal temperature reaches 165°F at the thickest point. Remove from heat 5 degrees before reaching 165°F to account for carryover cooking.
Step 6 - Skillet Method (Indoor Alternative): Heat a cast-iron or stainless steel skillet over medium-high heat with a light coating of oil. Once hot, carefully place the cilantro lime chicken in the skillet. Don't move it for the first 4 minutes to develop a golden crust. Flip and cook the other side for 4-5 minutes. For thicker pieces, reduce heat to medium, cover loosely, and cook until the internal temperature reaches 165°F.
Step 7 - Rest and Finish: Remove the cooked cilantro lime chicken from the heat and transfer to a clean cutting board or serving platter. Let it rest for 5 minutes. This allows the juices to redistribute, keeping the meat moist. Drizzle or brush with the reserved fresh cilantro lime marinade for added brightness and flavour.
Step 8 - Serve: Slice or shred the cilantro lime chicken and serve immediately. Use in tacos with your favorite toppings, over rice and vegetables for bowls, tossed with salad, or as a protein for any of your favorite dishes.
